Week of eating

Here's a look at our plates for this week... 

Mini donuts
We used my mini donut maker to create these, with VeganYumYum's recipe and some chocolate ganache. Next time I might make a more sugary and less healthy chocolate glaze... they were good, though.


Tempeh sandwich
Pasta salad
We had a dinner of tempeh sandwiches and pasta salad--even though it sounds like a lunch. Pasta salad is kind of a weird food to have for dinner, but when it's hot out, it feels more appropriate. I made this with pasta and navy beans, so it had plenty of protein, as well as peppers, tomatoes, spinach, and basil. This was tossed with olive oil, white wine vinegar, salt, pepper, and some vegan parmesan topping. The sandwiches had tempeh bacon and roasted peppers & onions (roasted in balsamic vinegar and olive oil) as well as some veganaise. Sorry for the half-eaten photo (or, well, half-eaten sandwich, the photo is all there)

Peanut butter pie
I made a peanut butter pie with this recipe, though I had to make a lot of alterations. The agar whipped cream set a little too firm, and I had to re-do the proportions for a couple ingredients, plus I used mini vegan chocolate chips instead of peanut butter cups (though that sounds awesome.) This was really good and rich; I would probably tweak the recipe even more if I made it again.

Mint cookies n' cream ice cream
Our latest try at ice cream was a huge success. We used Newman's Own mint chocolate cookie sandwiches with a vanilla ice cream recipe and added some mint extract. So good! We always add 1/4 tsp of xantham gum just before chilling, since it's hard to make homemade ice cream on the creamy rather than icy side otherwise. 

Everlasting Life meal
We had lasagna, veggie fish with rice, and kale from Everlasting Life Cafe -- so good! I still like their fried veggie chicken best, but the kale was perfect, and everything tasted great.

Dosa failure


We also tried our hand at making dosa, using a boxed mix we picked up in London. They didn't really hold together, due to our lack of skills and probably the not-so-great integrity of the mix. Worth another try, since we still have some of the mix left. The potato filling we made was good, and we also had some bhindi masala, which turned out really well.

Tonight we're planning some eggplant basil for our next houseguest, and some peanut butter chocolate cookies... can't wait.
